One of our favorite coffees every year...
Appropriately named 'clouds,' this coffee absolutely soars. The coffee cherries are hand picked at their peak ripeness, and during the processing Milton has an extended anaerobic fermentation of up to 80 hours, which accentuates all the natural process flavors already existing in the coffee.
After the initial fermentation, the coffees are lightly dried in mechanical dryers, which helps prevent a bit of the over-fermented flavors that can sometimes accompany natural anaerobic coffees. This craftsmanship is truly one-of-a-kind... a skill few producers in the world have mastered like Milton. From there, the cherries are then placed on raised beds for 1-2 days, and then placed in a silo until they reach their ideal moisture content.
Last years harvest was filled with ripe raspberry, something we marveled at. The nuance of the mango combined with the velvety Gesha mouthfeel is a marvel and a perfect example of what incredible coffee processing is capable of.
