About the coffee:
Our first ever Sidra offering!
From Finca Soledad in Ecuador, Pepe Jijon is one of the most well known producers in the world, and perhaps the most recognized in Ecuador. Although we’ve enjoyed his coffees from numerous roasters around the world, this is our first time partnering with Pepe.
The Oxi process is a spinoff of the typical washed process. The coffee is first fermented aerobically with oxygen in an open environment. Then the beans are pulped and fermented in a sealed tank in an anaerobic environment for 48 hours.
It’s then fully washed and dried in indirect and direct sunlight for 20 days.
