About the coffee:
Coffee has been produced on the La Divisa farm since 1940. Oscar Restrepo’s mother purchased the farm 12 years ago, and Oscar was immediately hooked. Around 7 years ago, they decided to start growing more exotic varietals, like Gesha and Pink Bourbon.
The coffee cherries are picked at their peak ripeness. The cherries then undergo a 36-hour fermentation. The cherries are transferred to raised drying beds where they undergo a typical natural process. This results in a coffee that’s incredibly delicate and tea-like. We taste notes of florals and candied fruit.
