Our first offering from Finca Fatima and Ernesto Perez. This kicks off what we hope to be a long-term relationship with APG, Ernesto’s exporting company.
At an altitude of around 1300 masl, Ernesto and his team have done an extraordinary job of producing high quality coffees that are clean, sweet, and fruit forward... a profile that fits exactly what we’re looking for in a beautiful Mexican coffee.
What struck us about this Geisha/Typica blend is the uniqueness both of varietal and of processing.
It’s rare to find Geisha blended with another varietal, but in this case it works perfectly. The Geisha adds all the tropical and citrus acidity with a creamy body. The typica adds structure and sweetness.
The icing on the cake is the slightly extended fermentation, which adds a beautiful layer of complexity.
