About the coffee:
Coffee has been produced on the La Divisa farm since 1940. Oscar Restrepo’s mother purchased the farm 12 years ago, and Oscar was immediately hooked. Around 7 years ago, they decided to start growing more exotic varietals, like Gesha and Pink Bourbon.
This coffee is a fantastic example of how coffee processing can impact flavor. It's harvested at peak ripeness, and then undergoes a 36-hour fermentation before being set out on raised beds for a standard natural process.
Lightly winey, but not overdone. The fermentation highlights the cherry fruitedness of the coffee plant, while not overpowering the terroir and varietal.
